Lamb burgers - serves 4
- 1 slice wholemeal bread
with crusts removed
- 500g/1lb minced lamb
- 1 large onion, finely chopped
- 1 egg
- a good pinch of dried oregano
- a good pinch of dried thyme
- 1tbs fresh parsley, chopped
- 1tbs fresh mint, chopped
- salt and freshly ground black

Soak the bread in water, then squeeze out the excess. If you have a food processor you can put in all the other ingredients and process them briefly – chop the onion finely first. However, it’s quite easy to mix them by hand. Crumble the bread into a bowl with the minced lamb. Some supermarkets sell low-fat, ready-minced lamb, or you can buy fillets, and mince them in a food processor. Add the onion. Beat the egg, and add it. Add the herbs, salt and pepper, and mix. This mixture can be left to gather flavour for 2–3 hours, or you can leave it all day in the refrigerator in a bowl covered with cling film.
When you’re ready to cook, heat the grill to maximum, shape the lamb mixture into burgers, oil the grill rack, and grill for 3–4 minutes on each side. Serve with Tomato sauce. |
